Top Italian chef joins Central Hotel

Chef Marco Letterese has taken over as the new Executive Chef at the Central Hotel in Donegal Town – and he can’t wait to get started.

Originally from Naples, and being raised on the north coast of Italy, Marco is passionate about great food and has over thirty years of experience cooking up a storm as a fresh pasta and seafood specialist.

Beginning his career at just 18 years old in London, Marco ran his own seafood restaurant in Italy before coming to Donegal.

Marco lives in Kesh with his wife and his dogs, and says that Donegal is like a home away from home.

“I love the hotel, I love the views, I love the sea,” he told Donegal Daily.

“Donegal is very similar to Italy, I got a lovely feeling when I arrived here. I like the hotel and the staff, and that’s what really drew me here.

Marco will be rejuvenating all aspects of the Central Hotel’s kitchen by taking a hands-on approach, and he can’t wait to get started.

“I’m a very hands-on chef, I’m responsible for all of the food that goes out and cooking and preparing it. The Central Hotel has given me a carte blanche to do what I need to do. The new menus will be Italian with an Irish twist.”
