Christmas cooking with chef Brian McDermott – Festive Leftover Hand-Held Baby Quiche

Chef Brian Mc Dermott has prepared some party recipes from his award-winning cookery book Donegal Table. The final recipe in the series is the Festive Leftover Hand-Held Baby Quiche. 

Do you still have some leftover Turkey & Ham? You gotta try this crispy handheld leftover festive quiche from Chef Brian Mc Dermott.

Eggs are easily the most versatile ingredients to have in your kitchen and when it comes to friends and craic this is the tastiest snack food you can prepare in minutes using your leftovers.

 

Serves: 12

Ingredients:

12 sheets filo pastry

3 eggs

100g Leftover Cooked Turkey

100g Leftover Cooked Ham

6 Scallions

50g Cheddar cheese, grated

Pepper

100ml cream

Fresh chives chopped

Method:

Preheat your oven to 180 C.

Lightly grease muffin tins. Using one sheet per quickly fold filo pastry in half and then in half again and push down into the base and sides of each muffin space on the tray. Repeat until all 12 are lined.

In a bowl, mix the eggs, chopped Turkey & Ham, scallions, cheese, cream and pepper.

Spoon the eggs mix into the Bake in the oven for 15 – 20 minutes or until golden brown.

If you have leftover stuffing scatter a bit of top prior to going into the oven.

Brian’s Tip:   Serve with a dollop cranberry sauce on top.
