Shandon Hotel & Spa scores big with multiple ‘Yes Chef’ nominations!

The Shandon Hotel & Spa has been shortlisted for no less than FIVE prestigious prizes at the Yes Chef awards!

The luxury four-star hotel on the Wild Atlantic Way provided exceptional dining experiences across Marbles Restaurant, JonJos Bar, Beats Bar, and the McCarthy Suite functions.

This year, the culinary team has been shortlisted for:

  • Casual Fine Dining Restaurant of the Year (Marbles Restaurant)
  • Luxury Hotel Restaurant of the Year (Marbles Restaurant)
  • Irish Culinary Experience of the Year (Beats Bar)
  • Front of House Team of the Year  Shandon Hotel & Spa
  • Chef of the Year – Josie Gallagher, Executive Head Chef of Shandon Resort

Josie Gallagher serves as the Executive Head Chef at the prestigious Shandon Hotel and Spa, overseeing the many dining outlets at the resort.

Shandon Hotel and Spa culinary team celebrates being finalists in the YES CHEF 2024 awards

Hailing from Donegal, Josie attributes his culinary expertise to his mentor, Tim O’Sullivan, the Executive Head Chef at Renvyle House in Connemara, Galway.

Transitioning to 2017, Josie joined the team at the newly established Shandon Hotel in Dunfanaghy, Donegal, emphasising the importance of teamwork in his kitchen. He mentions a noticeable shift towards gluten-free cuisine, though desserts pose a challenge in this aspect.

Despite a surge in demand for vegan dishes post-Covid, the trend has waned in recent years, according to Josie. At Marbles Restaurant, known for its fine dining experience with breathtaking views of Sheephaven Bay, seafood takes the spotlight on Josie’s menus, sourced from Albatross Seafood.

While Beats Bar offers a more relaxed dining experience, Marbles Restaurant presents a sophisticated culinary journey featuring multiple courses. The establishment’s dress code is smart casual, ensuring a memorable dining experience. Reservations are highly recommended as tables are often fully booked weeks in advance for this exceptional dining experience.

Josie and his fantastic team are excited to have launched their NEW Beats Bar Menu this week, with exciting new sharing ‘Stacked’ options such as the Wild Atlantic Seafood Stack, the Artisan Irish Cheese Stack and the Gourmet Stack which includes marinated pork ribs, mini sliders, wings, chicken cigars, chicken chunks, wedges garlic bread & dips, the perfect compliment to a Donegal Coastal Road Trip, best enjoyed taking in the amazing sea view from Beats Bar.
