PROSECCOWhether it’s a girl’s night in, an impromptu celebration or a pizza and prosecco night, this perky little Italian wine adds charm to every evening.

Donegal Daily shares a few of its favourites…

Lidl Prosecco Treviso Frizzante DOC €8.79

A pleasant, simple fizz with a delicate aroma of pear and a perfect pop of citrus. Nice in a Bellini.

A lovely dry and creamy glass of fizz. Not overly sweet; perfect for a party.

The Classic Bellini
A favourite cocktail of Ernest Hemingway and Orson Welles, the Bellini was created by Giuseppe Cipriani in Harry’s Bar, Venice, in 1948.

In the book, Harry’s Bar: The Life and Times of the Legendary Venice Landmark, by Arrigo Cipriani (son of Harry’s Bar founder Giuseppe ), the author writes: “My father was … inspired by a painter. The 15th century Venetian painter Giovanni Bellini was often mentioned at home. I had no idea at the time that the pink glow my father had so admired in one of Bellini’s paintings would be the inspiration for his famous cocktail.”

If you pop into Harry’s Bar now, your pink-glow Bellini will be served in a tumbler with a price tag of €16.50. But then, it is Venice, the experience, the bucket list, the history.

It’s difficult to source white peach purée on a Sunday afternoon in Donegal.

I did find Finest Call Peach Puree 1L -€9.99 at http://www.drinkstore.ie

For the Bellini:
A chilled Champagne flute
1 tbsp chilled white peach purée
Chilled prosecco
Put the peach purée in the bottom of the Champagne flute and half fill with prosecco. Stir well, allow the froth to subside, then top up with the prosecco. Do not under any circumstances put a slice of peach on the glass. Enjoy.
