Brian is a Resident Chef on RTE televeisions Today Show and BBC Radio Foyle.

Brian hosts cookery demonstrations across the country and opened Ireland’s first no-salt cookery school in his hometown of Moville, Inishowen.

Our salt intake has been a high priority issue for some time now, as the average intake for an adult is 11 grams, almost twice as much as the recommended six grams.

Instead of using salt Brian adds herbs and spices that complement, but don’t overshadow the main dish.

Brian told Donegal Daily, “It’s important that my food is healthy, doesn’t contain any added salt, but above all tastes fantastic and this is something I am passionate to teach.

So this Christmas, Brian will prepare Christmas dinner for one lucky winner’s family.
